A skilled chef prepares a wild pufferfish using expert techniques. The thinly sliced sashimi is so delicate that the pattern of the dish beneath shines through.
Every parts are prepared in the most suitable way, from the salt blended with dried pufferfish skin to the beautifully balanced flavors and presentation, reflecting the Japanese philosophy of honoring each ingredient.

The course begins with delicate soup topped with crispy fugu
crouton, followed by paper-thin sashimi, rich liver, olive oil-accented sashimi, grilled selections, caviar-nigiri, and more—about 20 dishes, each revealing a new expression of flavor.
Deep-fried fugu adds crisp contrast, the hotpot offers comfort, and the course ends with a warm rice porridge.
